Scrolls

Scrolls are byproduct of making “mord” why is dry rendered lard from bacon. Bacon is exposed to a high heat to render down the fat (mord) which is then used in cooking, the small pieces of bacon left over from the process are called scrolls. Scrolls were often bought from butchers and were used to add extra flavour and protein to dishes and were sometimes served in paper cones as a snack.
