Hogg’s pudding

Hog’s pudding is a form of sausage not unlike White pudding. Hog’s pudding is often used in breakfasts or served as a substitute to black pudding in recipes.

Its contents vary but can include pork, suet , breadcrumbs and oatmeal. It is well seasoned as usually contains spices to enhance the flavour including cumin and peppers of various kinds.

A Hog’s Pudding recipe

3 1/2 lbs ground pork.
3/4 cup dried bread crumbs (can be mixed with oat-meal if desired).
1/2 tsp white pepper.
3/4 tsp salt.
1/2 tsp garlic powder.
1/8 tsp ground cumen.
1/2 tsp onion powder.
Sausage Skins.
